Chef Silhouette Shannon

Silhouette started her culinary career seven years ago in New York City at MexiQ and The Flatiron Room, and recently had the honor to work directly under Chef Nils Noren for the grand opening of Marcus Samuelsson’s Streetbird in Harlem.

She’s no stranger to the Hudson Valley, though, having been sous chef for Puccini Ristorante in Rhinebeck, and later creating the menu for Modern Taco in Red Hook.

Chef Robert Irvine once told Silhouette never to cook in the shadow. She’s taking that advice and getting rave reviews for making comfort food sexy at the Towne Crier.

“I am truly blessed and humbled that I’m able to do what I love,” she says.

Mary’s exquisite desserts are a signature item at the Towne Crier.

It’s hard to walk past the dessert case poised at the Towne Crier’s entrance without ogling the temptations that await you: Chocolate Truffle Torte, Hazelnut Dacquoise, White Chocolate Lemon Cheesecake. Even a Poppyseed Cake made without dairy, sugar or eggs.

Mary, formerly of NY’s legendary Le Cirque, creates all her desserts on premises.
